Rare and authentic Cantonese home-style dish, passed down through generations. Salty and flavorful, pairs perfectly with white rice.
Ingredients:
  • 1 salted (hard-cooked) duck egg, shelled
  • 1.5 pounds ground pork
  • 1 tablespoon soy sauce
  • 0.5 teaspoon white sugar
  • 1 teaspoon ground black pepper
  • 1 tablespoon milk
  • 0.5 head broccoli, cut into florets
Instructions:
  • Separate the white and yolk of the salted egg. Mash the white in a small bowl with a spoon or blend in a food processor. Divide the yolk into four pieces and set aside.
  • Combine ground pork, salty egg white, regular egg, soy sauce, sugar, salt, pepper, and milk in a medium heat-proof bowl, using your hands for a smooth texture. Marinate for 15 minutes while you prep other dishes and cook rice for your Chinese meal.
  • Press the salted egg yolk pieces into the pork, ensuring even distribution. Flatten the top surface of the pork. Surround the pork with broccoli florets, creating a beautiful presentation.
  • Steam the meat in a bowl over medium-low heat for about 30 minutes until browned. Serve with rice and enjoy the yolk a little at a time with meat and rice for a perfectly balanced bite.
