Wholesome breakfast cookies with oats, whole wheat flour, flax, chocolate chips, and almond butter for a family-friendly treat.
Ingredients:
  • 2 cups rolled oats
  • 1 cup whole wheat pastry flour
  • 0.25 cup flax seed meal
  • 2.5 teaspoons ground cinnamon
  • 0.5 teaspoon sea salt
  • 1 cup honey
  • 2 egg whites
  • 4 teaspoons almond butter
  • 0.5 teaspoon vanilla extract
  • 4 ounces semisweet chocolate chips
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and generously spray 2 baking sheets with cooking spray.
  • In a large bowl, combine oats, pastry flour, flax meal, cinnamon, salt, and baking soda. Add honey, egg whites, almond butter, and vanilla extract to the mixture and stir until well-blended. Fold in chocolate chips, then form 36 dough balls and arrange them on baking sheets.
  • Bake in the oven until lightly golden and set, about 8-10 minutes. Let the cookies cool on the baking sheet for 10 minutes, then gently loosen each cookie and cool on the sheets for an additional 10 minutes.
