Clear soup with bamboo and tofu

Sip this soup from a cozy bowl for a classic experience.
Ingredients:
  • 8g bonito
  • 140g whole peeled bamboo shoot, thinly sliced, quartered
  • 10g dried wakame (seaweed)
  • 120g silken tofu, cut into 7mm cubes
  • 40.00 ml cooking sake
  • 5.30 gm soy sauce
  • Black sesame seeds, to serve
Instructions:
  • In a large saucepan, combine 1.2L of water and dashi. Bring to a boil over medium heat. Stir in bamboo and wakame, cook for 4 minutes. Add tofu and simmer for 1 more minute. Season with sake, soy sauce, and salt to your liking. Serve in small bowls, garnished with sesame seeds.
