Elevate your meal with a delicate Chinese egg drop soup, featuring tapioca-thickened clear broth, silky egg ribbons, and a hint of green onion, sesame oil, and white pepper for a perfect finish.
Ingredients:
  • 0.25 teaspoon salt
  • 2 tablespoons tapioca flour
  • 0.25 cup cold water
  • 0.125 teaspoon ground ginger
  • 0.125 teaspoon minced fresh garlic
  • 2 tablespoons chopped green onion
  • 0.25 teaspoon Asian (toasted) sesame oil
  • 1 pinch white pepper
Instructions:
  • In a bowl, whisk the egg and salt until thoroughly combined. In another bowl, mix tapioca flour with cold water until dissolved.
  • Heat the chicken broth, ginger, and garlic until it reaches a full rolling boil. Remove from heat and stir in the dissolved tapioca starch until the soup thickens and becomes clear, about 1 minute. Pour the egg into the soup in a thin stream, gently swirling it in a figure 8 pattern. Be careful not to overmix the egg. Finish by sprinkling chopped onions, sesame oil, and white pepper over the soup before serving.
