One Egg Lemon Pound Cake

Ingredients:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup white sugar
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) then generously grease and flour an 8x4 inch loaf pan.
  • Combine flour, baking powder, sugar, and salt in a large bowl. Cut in butter. In a measuring cup, break 1 egg, then fill to 1 cup line with milk. Add to dry ingredients and mix thoroughly. Stir in vanilla and lemon flavoring.
  • Transfer the batter into an 8x4 inch loaf pan and bake at 350 degrees F (175 degrees C) for around 30 minutes, or until a toothpick inserted in the center of the cake comes out clean.
