Impress your loved one with heart-shaped sponge cakes. Simply irresistible!
Ingredients:
  • 6 eggs
  • 161.25 gm caster sugar
  • 2.20 gm vanilla extract
  • 1 tsp finely grated lemon rind
  • 125.00 ml plain flour
  • 75.00 gm self-raising flour
  • 65.00 gm cornflour
  • 40.00 gm boiling water
  • 25g butter, melted
  • 1/2 x 300ml tub thickened cream, whipped
  • 125.00 ml lemon curd
  • 12.00 gm icing sugar mixture
  • 3 lemons
Instructions:
  • Preheat the oven to 180C/160C fan-forced, then prepare a 5.5cm-deep, 23cm x 33cm (top) roasting pan by greasing it and lining it with baking paper, ensuring the paper extends 2cm above the edges of the pan on all sides.
  • With an electric mixer, whip together eggs, sugar, vanilla, and lemon zest on high speed for 8 to 10 minutes until the mixture is thick, creamy, and the sugar has dissolved. Triple sift the flours. Gently fold the sifted flours into the mixture using a large metal spoon. Carefully fold in the boiling water and melted butter. Pour the batter into the prepared pan.
  • Bake the sponge for 20 to 25 minutes until it springs back when lightly touched. Place a wire rack lined with baking paper over the sponge, flip it top-side up, cover with a tea towel, and let it cool completely.
  • Prepare Candied Lemon: Line a baking tray with parchment paper. Zest the lemons. In a small saucepan, combine sugar and 1/2 cup water over low heat until sugar dissolves. Bring to a boil, then reduce heat. Add lemon zest and simmer until translucent, about 10 minutes. Remove from heat and transfer zest to the tray using tongs. Gently separate the zest with a fork and let it set for 10 minutes.
  • Cut the cake into 18 heart shapes using a 4cm x 4.5cm heart-shaped cutter. Split each heart in half horizontally. Spread 3 teaspoons of cream on each base, add 1 teaspoon of lemon curd, then sandwich with the cake tops. Dust with icing sugar, top with candied lemon, and serve.
