Fluffy cloud eggs with grated cheese, easy to make with just three ingredients: beat whites, fold in cheese, bake with tucked yolk.
Ingredients:
  • 2 eggs
  • 2 small pinches of salt (a pinch per egg)
  • 1/4 cup grated cheese, such as Gruyere, Swiss, or Parmesan
Instructions:
  • Preheat the oven to 450°F (230°C) with a rack positioned in the middle. Line a sturdy roasting pan or baking sheet with parchment paper or a Silpat to prepare for baking.
  • Carefully divide the eggs: Gently separate the rich egg yolks from the fluffy whites, ensuring there are no traces of yolk in the whites. To maintain precision, consider using individual prep bowls for each yolk if handling multiple eggs.
  • Whip egg whites to stiff peaks: In a clean mixer bowl, add egg whites and a pinch of salt to each. Using a whisk attachment on a mixer, start on low speed and gradually increase to high speed until stiff peaks form.
  • Incorporate the cheese: Gently mix in the grated cheese, being careful not to deflate the egg whites.
  • Spoon 2 portions of the egg white mixture onto the lined baking sheet, shaping them into nest-like mounds with center indentations.
