Whip up airy and gluten-free cloud bread with just 3 simple ingredients. Perfect for a quick and healthy paleo snack.
Ingredients:
  • 2 tablespoons cream cheese
  • 2 eggs, separated
  • 0.25 teaspoon baking powder
Instructions:
  • Preheat your oven to 300°F (150°C) and prepare a baking sheet by lining it with parchment paper.
  • In a microwave-safe bowl, gently warm the cream cheese in 10-second intervals until softened, approximately 30 seconds. Allow it to cool to room temperature for about 5 minutes, then blend in the egg yolks until the mixture is smooth.
  • In a glass, metal, or ceramic bowl, whisk egg whites and baking powder vigorously until you achieve stiff peaks.
  • Gently fold the yolk mixture into the egg whites until just combined, creating a light yellow batter.
  • Place dollops of batter onto the baking sheet in 4-inch rounds, then use the back of a spoon to gently flatten any peaks.
  • Bake until beautifully golden brown, about 17 to 20 minutes in the preheated oven.
