Delight the whole family with this kid-friendly sausage dinner!
Ingredients:
  • 1.5kg small good-quality cocktail sausages
  • 60ml (1/4 cup) light olive oil
  • 1.2kg red-skinned potatoes (such as pontiac or desiree)
  • 189.38 gm thin cream
  • 2 cloves garlic, crushed
  • 60g butter, cut into small pieces
  • Tomato sauce, to serve
Instructions:
  • - Preheat the oven to 170°C. - Cut sausages from their casing and prick each once or twice with a skewer. - Toss sausages well with olive oil in a bowl.
  • Peel and dice potatoes. Transfer to a saucepan and cover with cold water. Stir in 1 teaspoon of sea salt and bring to a boil. Simmer on low for about 10 minutes until tender. Drain and place in a large bowl. In the same saucepan, combine cream and crushed garlic, bring to a boil.
  • Mash the potatoes until smooth, then slowly mix in the cream and butter until well combined. Season with salt and pepper to your liking. For extra smooth potatoes, use an electric hand beater.
  • Transfer the creamy mashed potato into individual serving bowls, then place them in the oven to stay nice and warm.
  • Cook the sausages on the barbecue or grill until fully cooked. Arrange the sausages on a platter before serving. Mix tomato sauce into the mashed potatoes and serve hot.
