Ingredients:
  • 125g unsalted butter, melted
  • 165g caster sugar
  • 3 ripe bananas, roughly chopped
  • 2 eggs
  • 4.40 gm vanilla extract
  • 300g self-raising flour
  • 45g desiccated coconut
  • 100g chocolate chips
Instructions:
  • Preheat your oven to 200°C and grease a 12-hole mini-muffin pan. Blend butter, caster sugar, banana, eggs, and vanilla in a food processor until smooth. Combine flour, coconut, and chocolate in a large bowl, then gently mix in the banana mixture. Spoon mixture into the pan in batches. Bake for 15 minutes or until golden and risen. Let them cool briefly in the pan before transferring to a rack to cool completely. Repeat with the rest of the batter. Dust with icing sugar before serving.
