Coconut Almond Flour Chocolate Chip Cookies

Gluten-free chocolate chip cookies with almond and coconut flour for a delicious twist!
Ingredients:
  • 1 cup softened butter
  • 0.75 cup packed brown sugar
  • 0.75 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1.25 cups almond flour
  • 1 cup coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 0.5 cup chocolate chips, or to taste
  • 0.25 cup rolled oats
  • 0.25 cup shredded coconut
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and prep 2 baking sheets with a cozy layer of parchment paper.
  • In a large bowl, cream together butter, brown sugar, and white sugar using an electric mixer until creamy. Mix in vanilla extract, then add eggs one at a time.
  • In a separate bowl, blend almond flour, coconut flour, baking soda, and salt. Combine with the creamed butter mixture. Stir in chocolate chips, oats, and coconut until just mixed.
  • Drop dollops of cookie dough onto the lined baking sheets.
  • Bake until golden brown in the preheated oven for 12 to 15 minutes.
