Create a sultry coconut and passionfruit dessert for a romantic night.
Ingredients:
  • 150.00 gm self-raising flour
  • 215.00 gm caster sugar
  • 42.50 gm desiccated coconut
  • 166.65 gm light coconut milk
  • pure icing sugar, to serve
  • 7.50 gm cornflour
  • 128.75 gm milk
  • 2 small lemons, juiced
  • 3 passionfruit, halved
Instructions:
  • Preheat your oven to 180°C. Grease a 6-cup, 5.5cm-deep, 19cm x 25cm (base) ovenproof dish and place it on a baking tray lined with baking paper.
  • Sift flour into a bowl. Add sugar and coconut, then mix well. In a separate jug, combine coconut milk, egg, and butter. Pour the wet ingredients into the flour mixture and gently stir until just combined. Transfer the batter into a prepared dish and smooth the surface.
  • Prepare the sauce: In a bowl, mix sugar and cornflour then sprinkle over the pudding. In a small saucepan, combine milk and 1/3 cup lemon juice (don't panic if it curdles). Cook over medium heat until it boils, then remove from heat and add passionfruit pulp. Slowly pour the hot lemon mixture over the pudding using a large metal spoon.
  • Bake for 50-55 minutes until a tester comes out clean. Dust with icing sugar and serve right away.
