Coconut and strawberry parfait

Indulge in a refreshing and guilt-free coconut strawberry parfait - perfect for a quick weeknight dessert or entertaining guests.
Ingredients:
  • 1/4 tsp finely grated lime rind
  • 10.60 gm fresh lime juice
  • 10.00 gm caster sugar
  • 1 x 250g punnet strawberries, washed, hulled
  • 20.00 gm hot water
  • 3.00 gm gelatine powder
  • 125ml (1/2 cup) chilled Light & Creamy Coconut Flavoured Evaporated Milk
  • 20.00 gm caster sugar
  • 2.60 gm shredded coconut, toasted
Instructions:
  • In a food processor, combine lime rind, lime juice, sugar, and one-third of the strawberries. Process until smooth.
  • Slice the remaining strawberries thinly and mix with the strawberry puree in a bowl. Spoon the strawberry mixture into four 250ml (1-cup) serving glasses.
  • Place hot water in a small heatproof dish, sprinkle with gelatin, and sit the dish in a small saucepan. Pour enough boiling water to reach halfway up the dish and whisk with a fork until the gelatine dissolves.
  • Beat the gelatine mixture, evaporated milk, and sugar with an electric beater in a large bowl until fluffy. Spoon it evenly over the strawberry mixture and chill in the fridge until set, about 6 hours.
  • Garnish with shredded coconut before serving.
