Ingredients:
  • 270g rolled oats
  • 1 Granny Smith apple, cored, coarsely grated
  • 280g yoghurt
  • 250ml apple juice
  • 185ml coconut milk
  • 1 tsp vanilla bean paste
  • 2.50 gm ground cinnamon
  • Thinly sliced strawberries, to serve
  • Strawberry yoghurt, to serve
  • 250g strawberries, quartered
  • 21.00 gm lemon juice
Instructions:
  • Mix together oats, apple, vanilla yoghurt, apple juice, coconut milk, vanilla, and cinnamon in a bowl. Cover with plastic wrap and refrigerate overnight to soak.
  • To prepare the strawberry jam, simply mix the strawberries, sugar, and lemon juice in a saucepan over medium heat. Stir occasionally for 7-8 minutes until the strawberries break down and release their juices. Continue cooking for another 2 minutes until the mixture thickens to a jam-like consistency. Remove from heat, let it cool for 30 minutes, then transfer to a bowl, cover with plastic wrap, and chill in the fridge. Enjoy!
  • Evenly distribute the strawberry jam among the serving jars. Sprinkle the oat mixture on top. Cut heart shapes from strawberry slices using a small heart-shaped cutter. Place the strawberry hearts around the sides of each jar. Finish by adding a dollop of strawberry yogurt on top.
