Upgrade classic crumble with a tasty twist of strawberry and coconut.
Ingredients:
  • 500g strawberries, hulled and halved
  • 12.00 gm icing sugar
  • 1 vanilla pod, split, seeds scraped
  • 40.00 ml mint, finely shredded
  • 16.25 gm shredded coconut
  • 62.50 ml slivered almonds
  • 75g butter, chopped
  • 62.50 ml plain flour
  • 33.00 gm rolled oats
  • 32.00 gm brown sugar
  • 54.00 gm maple syrup
  • 166.65 gm Brand double cream
Instructions:
  • Combine strawberries, icing sugar, vanilla, and mint in a bowl. Let sit for 10 minutes until slightly syrupy.
  • Place coconut in a dry non-stick frying pan over medium heat. Stir with a heatproof spatula for 1 min until lightly golden. Transfer to a mixing bowl. Then toast almonds in the same pan for 2 mins until golden and add to the coconut.
  • Melt butter in a pan on medium heat, then add flour and oats. Cook for 3 mins, stirring occasionally until lightly golden. Add sugar and maple syrup, cook for 2 more mins, stirring until sticky and caramelized. Transfer to a bowl and mix until well combined.
  • Arrange fresh, juicy strawberries in individual serving bowls, generously sprinkle the delightful crumble mixture on top, and luxuriously drizzle with cream before serving.
