Refreshing coconut apricot slice, ideal for a quick workday boost.
Ingredients:
  • 125g unsalted butter
  • 50ml thick cream
  • 200g white chocolate, broken into pieces
  • 375.00 ml chopped dried apricots
  • 250g shortbread biscuits, crushed
  • 85.00 gm desiccated coconut
  • 25g unsalted butter, melted
  • 10.60 gm lemon juice
  • 350g icing sugar
Instructions:
  • Prepare a 3cm-deep, 18 x 25cm baking pan by lining it with baking paper.
  • In a saucepan over medium heat, combine the butter and cream. Bring to a boil, then remove from heat.
  • Melt the chocolate completely, then mix in the apricots, biscuit crumbs, and coconut. Press the mixture into the baking pan and refrigerate for 1 hour before serving.
  • Prepare the icing by mixing butter, lemon juice, and 2 tablespoons of warm water in a large bowl. Add the icing sugar and mix until smooth. Spread the icing over the slice and refrigerate until firm. Serve by slicing in the pan.
