Transform classic chocolate chip cookie dough into a deliciously unique buffalo chip cookie with coconut, corn flakes, and raisins.
Ingredients:
  • 2 cups all-purpose flour
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup coconut oil
  • 1 cup lightly packed brown sugar
  • 1 cup white sugar
  • 1 cup rolled oats
  • 1 cup crushed corn flakes
  • 1 cup chocolate chips
  • 0.5 cup shredded coconut
  • 0.5 cup raisins
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) while you generously grease 2 baking sheets.
  • Combine the flour, cocoa powder, baking powder, and baking soda in a bowl.
  • In a separate bowl, cream coconut oil, brown sugar, and white sugar until smooth. Beat in eggs and vanilla extract. Gently fold in flour mixture until just combined. Fold in rolled oats, corn flakes, chocolate chips, shredded coconut, and raisins.
  • Spoon dollops of batter onto the prepared baking sheet.
  • Bake the cookies in a preheated oven until the edges are lightly browned and the middles are cooked through, about 10 to 12 minutes. Let them cool on the pans for 10 minutes before transferring them to a wire rack to cool completely.
