Ingredients:
  • 100g butter, softened
  • 100g caster sugar
  • 1 egg
  • 100g self-raising flour, sifted
  • Pinch of salt
  • 100g shredded coconut
Instructions:
  • Preheat your oven to 180C and prepare 2 baking trays by lining them.
  • In a mixing bowl, combine sugar and butter until pale and creamy. Incorporate the egg thoroughly. Then, stir in the flour, salt, and coconut until evenly mixed.
  • Moisten hands and a fork. Shape into balls and flatten with a fork.
  • Simmer for 13 minutes until perfectly cooked.
