Coconut almond cookies, gluten-free and versatile for baking or no-bake options.
Ingredients:
  • 2 cups unsweetened shredded coconut
  • 1 cup almond flour
  • 0.33333334326744 cup maple syrup
  • 3.5 tablespoons melted coconut oil
  • 0.5 teaspoon vanilla extract
  • 0.125 teaspoon salt
Instructions:
  • Prepare 2 baking sheets by lining them with parchment paper.
  • Combine coconut, almond flour, maple syrup, coconut oil, vanilla extract, and salt in a bowl, mixing until fully incorporated.
  • Scoop tablespoon-sized cookie dough mounds onto prepared baking sheets. Chill in the refrigerator or freezer until ready to use.
  • Preheat the oven to 400 degrees F (200 degrees C) before baking the cookies.
  • Place cookies onto 2 ungreased baking sheets.
  • Place in the warm oven and bake until golden brown, about 5 to 10 minutes.
