Chill coconut cream for easy, healthy dessert anytime.
Ingredients:
  • 400g can coconut cream, chilled
  • 1 mango, sliced
  • 125.00 ml frozen raspberries, thawed
  • 40.00 ml sliced natural almonds, toasted
Instructions:
  • - Invert the can and carefully pour out the coconut milk into a separate container for future use (refer to notes). - Scoop the thick coconut cream into the bowl of an electric mixer with a whisk attachment. - Whip the coconut cream for 1-2 minutes until soft peaks form. If needed, gradually mix in 1-2 tablespoons of coconut milk to adjust the consistency.
  • In each of the 2 serving glasses or jars, layer one-third of the mango slices followed by a dollop of half the coconut cream. Add a layer of raspberries and another third of the mango. Pour the remaining coconut cream over the top and finish with the rest of the mango slices and sprinkle with almonds. Enjoy!
