Sweet and moist coconut flour banana muffins loaded with chocolate chips for a delightful treat.
Ingredients:
  • 3 ripe bananas, mashed
  • 3 large eggs
  • 0.25 cup coconut flour
  • 2 tablespoons coconut flour
  • 1 tablespoon stevia powder
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.33333334326744 cup miniature semisweet chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 10 muffin cups with paper liners.
  • Combine ripe bananas, beaten eggs, coconut flour, stevia, baking powder, and salt in a bowl and mix well using a whisk or fork. Fold in chocolate chips until evenly distributed.
  • Divide the mixture evenly among the muffin cups, filling each about 1/2 inch from the top, as these muffins have a more subtle rise.
  • Bake the muffins in the preheated oven for about 25 minutes or until a toothpick inserted into the center comes out clean. Let them cool for 5 minutes before transferring to a paper towel-lined plate; don't worry if some moisture from the bananas leaks through the liners, it's normal.
