Elevate your tropical fruit salad with a touch of liqueur for a special dessert.
Ingredients:
  • 1 pineapple, cored, cut into thick rings
  • 2 mangoes, peeled, cut into wedges
  • 2 bananas, sliced
  • 2 large passionfruit
  • 62.50 ml Malibu liqueur (see note)
  • 300ml thickened cream
  • 62.50 ml grated palm sugar or brown sugar
  • 10.40 gm shredded coconut, toasted
Instructions:
  • Cut the pineapple rings into wedges and transfer them to a bowl. Combine them with the mango, banana, 1/3 cup of passionfruit pulp, and Malibu. Gently stir the mixture until everything is well combined. Cover the bowl and refrigerate for 1 hour before serving.
  • With an electric mixer, whip the cream until it thickens. Then, mix in the sugar and continue beating until thickened again.
  • Sprinkle shredded coconut over the colorful fruit salad. Finish by drizzling the rest of the luscious passionfruit on top. Serve alongside a dollop of cream sweetened with a touch of sugar.
