Whisk coconut milk and lime for a zesty ice cream. Top with mango slices for a tropical treat.
Ingredients:
  • 2 (14 ounce) cans unsweetened coconut milk
  • 1 cup white sugar
  • 2 tablespoons white sugar
  • 1 cup half-and-half, chilled
  • 5 tablespoons lime juice
  • 1 tablespoon lime zest
  • 1 pinch salt
  • 2 mangoes - peeled, seeded, and sliced
  • 1 lime, thinly sliced
Instructions:
  • Combine coconut milk, sugar, half-and-half, lime juice, lime zest, and salt in a bowl, whisking until sugar dissolves. Transfer the mixture to an ice cream maker and freeze until 'soft-serve' consistency is achieved following the manufacturer's instructions.
  • Place the ice cream in a lidded plastic container, covering the surface with plastic wrap before sealing it. Allow the ice cream to ripen in the freezer for a minimum of 3 hours or preferably overnight for optimal flavor.
  • Spoon ice cream into elegant glasses or bowls and top with fresh mango and lime slices.
