Treat yourself to zesty lime and creamy coconut ice cream this weekend.
Ingredients:
  • 20g desiccated coconut
  • 30.00 ml grated lime zest
  • 42.00 gm lime juice
  • 33.00 gm coconut milk powder
  • 1L vanilla ice cream, softened
  • Biscotti, to serve
  • 110g caster sugar
  • Zest of 1 large lime, plus 110ml lime juice
  • 2.50 gm arrowroot
Instructions:
  • In a bowl, combine shredded coconut, lemon zest, lemon juice, and coconut powder. Stir the coconut mixture into the ice cream in a large bowl until well combined. Transfer the mixture to a plastic container, then freeze for at least 4 hours until firm.
  • Start by combining sugar and 110ml of water in a saucepan. Stir over gentle heat until the sugar dissolves. Next, add the zest and let it simmer for 10 minutes. In a separate bowl, mix lime juice and arrowroot together. Pour this mixture into the pan and cook for 2 minutes until it thickens slightly. Chill the syrup before serving it with ice cream and biscotti.
