Indulge in nostalgic coconut treats.
Ingredients:
  • 97.50 gm shredded coconut
  • 200g block milk chocolate, chopped
  • 100g dark chocolate, chopped
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Line a large baking tray with baking paper and spread coconut evenly. Bake for 5 minutes, stirring halfway, until the coconut is golden and toasted. Allow the coconut to cool completely before using.
  • Combine both chocolates in a microwave-safe bowl, then microwave on MEDIUM (50%) for 1 to 2 minutes until smooth, stirring with a metal spoon halfway through. Save 2 tablespoons of toasted coconut, then add the rest to the melted chocolate. Mix well, then let it sit for 5 minutes.
  • Prepare 2 large baking trays with parchment paper. Spoon 2 level teaspoons of chocolate mixture onto the trays to form 4.5cm discs. Top each disc with toasted coconut in the center. Chill for 30 minutes until firm. Serve and enjoy.
