Ingredients:
  • 110g unsalted butter
  • 48.75 gm shredded coconut
  • 250.00 ml plain flour
  • 112.50 gm sugar
  • 161.25 gm sweetened condensed milk
  • 150.00 gm icing sugar
  • 2.50 gm cocoa powder
  • 20.00 gm unsalted butter
  • 65.00 gm shredded coconut
Instructions:
  • Preheat your oven to 180C and prepare a tray by lining it with baking paper.
  • Combine 3/4 cup of coconut, sugar, and flour in a bowl to create the base.
  • Melt 110g butter in a saucepan until smooth. Combine melted butter with flour in a bowl, mixing gently. Spread the mixture evenly in a tray with a spoon. Bake in a preheated oven for 12 minutes. Allow to cool in the pan before serving.
  • Melt butter in a saucepan, then stir in condensed milk until well combined. Remove from heat.
  • In a bowl, gently sift together cocoa and icing sugar. Stir in 1 cup of coconut. Add the butter and condensed milk. Combine everything well and if the topping thickens too quickly, stir in some boiling water.
  • After chilling the base, generously layer the topping over it and refrigerate for a minimum of 4 hours until perfectly set.
