Coconut macaroon cookies with a chewy texture and curved shape.
Ingredients:
  • 1/4 cup (1/2 a stick) of unsalted butter, softened (see how to soften butter quickly )
  • 1/2 cup sugar
  • 2 large egg whites, lightly beaten
  • 3 Tbsp all-purpose flour
  • 2 cups sweetened shredded coconut, toasted lightly, divided
Instructions:
  • Preheat your oven to a toasty 400°F.
  • Cream butter and sugar until light and fluffy. Gradually add eggs, beating well after each addition until smooth.
  • Incorporate flour and coconut: Sprinkle flour over the mixture and delicately fold in 1 1/2 cups of coconut.
  • Drop spoonfuls of the mixture onto prepared baking sheets, leaving 3 inches of space between each. Sprinkle a little of the remaining 1/2 cup coconut over the center of each round before baking.
  • Bake the rounds in a preheated oven at 400°F on the middle rack for 6 to 9 minutes, until the edges turn golden brown.
  • After baking, allow cookies to cool on sheets for 30 seconds until slightly firm, then gently drape over a rolling pin or bottle to set their shape. If cookies become too hard to drape, briefly warm them in the oven. Allow cookies to cool fully before enjoying.
