Spicy tomato curry customizable to your taste, loved by my family and made monthly.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 2 teaspoons cumin
  • 2 teaspoons coriander
  • 1 teaspoon cardamom
  • 0.5 teaspoon turmeric
  • 0.5 teaspoon salt
  • 2 fresh jalapeno peppers, seeded and diced
  • 0.23999999463558 cup chopped cilantro
  • 1 tablespoon lemon juice
  • 1 (28 ounce) can diced tomatoes with juice
  • 1 pound cod fillets, cut into chunks
Instructions:
  • In a skillet over medium heat, warm the oil. Add the onion and cook on low heat, stirring frequently, for 15 minutes until the onion is soft and browned.
  • Combine the garlic and ginger pastes in the skillet and cook for 1 minute. Add cumin, coriander, cardamom, turmeric, and salt. Stir in jalapeno, cilantro, lemon juice, and tomatoes with juice, scraping up any brown bits. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes. Optionally, you can set the sauce aside for a few hours to enhance the flavors.
  • Bring the sauce to a boil, then add the cod to the skillet. Simmer on low for 15 minutes, or until the fish flakes easily with a fork.
