Coffee 'n Cream Brownies

Coffee lover's cream cheese brownies: Rich, flavorful treat with a swirl of creamy goodness.
Ingredients:
  • 1 box (18 oz) Betty Crocker™ Delights Supreme Chocolate Chunk Brownie Mix
  • 3 tablespoons water
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 to 3 teaspoons instant espresso coffee (dry)
  • 1 package (3 ounces) cream cheese, softened
  • 2 tablespoons butter or margarine, softened
  • 1/4 cup sugar
  • 2 tablespoons coffee liqueur, if desired
  • 1 egg
Instructions:
  • Preheat oven to 350°F and lightly grease the bottom of a 13x9x2-inch rectangular pan.
  • Combine brownie mix, water, oil, 2 eggs, and espresso powder in a medium bowl. Stir about 50 times until fully blended. Spread 2/3 of the batter evenly in the pan.
  • In a small bowl, beat the remaining ingredients with an electric mixer until smooth and fluffy. Spread this mixture over the batter in the pan. Then, drop the remaining batter by tablespoonfuls onto the cream cheese mixture and lightly swirl with a spatula for a marbled effect.
  • Bake for 30-34 minutes until a toothpick inserted 2 inches from the side of the pan comes out clean. Allow to cool completely for easier cutting. Cut into 18 brownies by making 6 rows by 3 rows. Store in a tightly covered container.
