Coffee and amaretti ice-cream

Elevate your ice cream game with a decadent adult twist - rich coffee flavor drizzled with warm chocolate sauce.
Ingredients:
  • 1 x 600ml ctn thickened cream
  • 250ml (1 cup) milk
  • 20.00 ml instant coffee powder
  • 6 egg yolks
  • 100g (1/2 cup, firmly packed) brown sugar
  • 12 amaretti biscuits, coarsely broken
  • 10.00 gm boiling water
  • 2 tsp instant coffee powder
  • 100g dark chocolate, coarsely chopped
  • 125ml (1/2 cup) thickened cream
  • 55g (1/4 cup) caster sugar
Instructions:
  • In a saucepan over medium heat, mix the cream, milk, and coffee until it simmers. Remove from heat. In a large heatproof bowl, whisk egg yolks and sugar until thick and pale. Slowly incorporate the cream mixture into the egg mixture. Transfer to a clean saucepan over low heat. Cook, stirring for 5-7 minutes, until the custard coats the back of a spoon.
  • Transfer the creamy custard into a sleek metal container. Seal it with foil and chill in the freezer for 3 hours until it sets perfectly.
  • Break up the ice-cream with a metal spoon, transfer to a bowl, and use an electric beater to beat until smooth. Return the mixture to the container, add amaretti biscuits, gently fold through, cover with foil, and freeze for 4 hours until firm.
  • To prepare the chocolate sauce, mix the water and coffee in a heatproof bowl. Add the chocolate, cream, and sugar. Set the bowl over a saucepan of simmering water (ensuring the water doesn't touch the bowl). Stir occasionally with a metal spoon until the chocolate melts and the mixture turns smooth.
  • Divide the ice-cream into serving bowls. Top with a generous drizzle of warm or room temperature chocolate sauce and serve right away.
