Banana muffins with amaretto-coffee glaze and a fluffy texture from sour cream.
Ingredients:
  • 2 cups sifted all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.75 teaspoon baking soda
  • 4 very ripe bananas, mashed, or more to taste
  • 0.33333334326744 cup sour cream
  • 1 cup white sugar
  • 0.5 cup canola oil
  • 2 large eggs
  • 1 teaspoon amaretto liqueur
  • 1 teaspoon instant coffee
  • 1 teaspoon hot water
  • 0.33333334326744 cup confectioners' sugar
  • 1.5 teaspoons oil
  • 0.5 teaspoon amaretto liqueur
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare two 12-cup muffin tins with paper liners.
  • In a bowl, combine flour, baking powder, baking soda, and salt. In another bowl, mix mashed bananas and sour cream.
  • In a spacious mixing bowl, whisk together sugar and oil until well combined. Gently stir in eggs until the mixture becomes light and fluffy. Blend in the liqueur, then the flour mixture. Fold in the banana mixture and stir until just combined, ensuring to quickly scrape any bits from the sides of the bowl; avoid overmixing. Fill the prepared muffin cups with the batter, reaching 3/4 full.
  • Bake in the preheated oven until the tops are beautifully golden and a toothpick inserted into the center comes out clean, for about 25 to 30 minutes. Allow to cool in the tins for 5 minutes, then transfer to a wire rack to cool for approximately 20 minutes.
  • In a medium bowl, mix instant coffee with hot water until dissolved. Add confectioners' sugar, oil, and liqueur, then drizzle over the cooled muffins.
