Crispy and Creamy Doughnuts

Make delicious glazed doughnuts at home that rival your favorite shop: crispy, fluffy, and perfectly sweet!
Ingredients:
  • 2 (.25 ounce) envelopes active dry yeast
  • 0.25 cup warm water (105 to 115 degrees)
  • 1.5 cups lukewarm milk
  • 0.5 cup white sugar
  • 1 teaspoon salt
  • 0.33333334326744 cup shortening
  • 5 cups all-purpose flour
  • 1 quart vegetable oil for frying
  • 0.33333334326744 cup butter
  • 2 cups confectioners' sugar
  • 1.5 teaspoons vanilla
  • 4 tablespoons hot water or as needed
Instructions:
  • Sprinkle the yeast into the warm water and allow it to sit for 5 minutes until it becomes foamy.
  • Combine yeast mixture, milk, sugar, salt, eggs, shortening, and 2 cups of flour in a large bowl. Mix until well combined. Gradually add remaining flour 1/2 cup at a time until dough no longer sticks to the bowl. Knead for about 5 minutes until smooth and elastic. Place dough in a greased bowl, cover, and let it rise in a warm place until doubled in size. Dough is ready when indentation remains when touched.
  • Transfer the dough onto a floured surface and softly roll it out to 1/2 inch thickness. Use a floured doughnut cutter to cut out the shapes. Allow the doughnuts to rise again until doubled in size, covering them loosely with a cloth.
  • In a saucepan over medium heat, melt butter until smooth. Stir in confectioners' sugar and vanilla, then gradually mix in hot water one tablespoon at a time until the icing reaches a thin consistency. Remove from heat and set aside.
  • Preheat oil to 350 degrees F (175 degrees C, using a deep-fryer or large heavy skillet. Carefully slide doughnuts into hot oil using a wide spatula. Fry until golden brown on both sides, then transfer to a wire rack to cool. Dip hot doughnuts in glaze and place back on racks to set. Place a cookie sheet or tray under racks for easy cleanup.
