Kid-friendly mac and cheese with crispy potato chip crust.
Ingredients:
  • 300g dried penne pasta
  • 60g butter
  • 2 shortcut bacon rashers, trimmed, chopped
  • 1 small brown onion, finely chopped
  • 20.00 ml roughly chopped fresh thyme leaves, plus extra to serve
  • 1 garlic clove, crushed
  • 62.50 ml plain flour
  • 386.25 gm milk
  • 125g cream cheese, chopped
  • 250.00 ml grated Colby cheese
  • 45g packet crinkle cut original potato chips, lightly crushed
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Grease a 4cm-deep baking dish measuring 17cm x 22cm at the base and 20.5cm x 26cm at the top. Cook the pasta according to package instructions, then drain.
  • Melt 10g butter in a large saucepan over medium-high heat until sizzling. Add bacon and cook for 5 minutes or until golden, stirring occasionally. Drain on a paper towel-lined plate.
  • Melt the rest of the butter in the pan and sauté the onion until softened. Stir in thyme and garlic until fragrant. Sprinkle in the flour and cook until bubbling. Slowly pour in the milk, stirring until smooth. Mix in cream cheese and 1/2 cup of cheese. Cook until the mixture boils and thickens, about 4 to 5 minutes.
  • Combine the pasta with the cheese mixture and stir well. Transfer the mixture into the prepared pan. Top it with bacon, chips, and the remaining cheese. Bake for 20 to 25 minutes until the topping is golden and crisp. Let it stand for 5 minutes before serving, topped with extra thyme.
