Coffee and nougat semifreddo

Impressive semifreddo with chocolate and nougat topping.
Ingredients:
  • 3 eggs
  • 70.95 gm caster sugar
  • 419.15 gm thickened cream
  • 2 tsp coffee essence
  • 225g fruit and nut soft nougat, cut into 1cm pieces (see notes and tips)
  • Grated chocolate, to serve
  • Roughly chopped fruit and nut soft nougat, to serve
Instructions:
  • Prepare your loaf pan by greasing it and lining the base and sides with baking paper, leaving a generous 5cm overhang on the long ends.
  • Beat eggs and sugar in an electric mixer for 5 minutes until thick and creamy. Wash and dry beaters. In a separate bowl, beat cream and essence until soft peaks form.
  • Combine the cream mixture and nougat with the egg mixture gently. Transfer the mixture into the prepared pan. Seal with plastic wrap and freeze overnight. Unmold onto a plate and garnish with chocolate and chopped nougat before serving.
