Overnight two-raisin quick bread baked in coffee cans.
Ingredients:
  • 1 cup raisins
  • 1 cup golden raisins
  • 4 teaspoons baking soda
  • 2 cups boiling water
  • 4 cups all-purpose flour
  • 2 cups sugar
  • 0.5 teaspoon salt
  • 0.25 cup vegetable oil
Instructions:
  • In a medium bowl, combine dark and golden raisins. Dissolve baking soda in boiling water, then pour over the raisins. Allow to sit overnight without stirring.
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease three 1-pound coffee cans.
  • Combine flour, sugar, and salt in a large bowl. Mix in raisins with water and oil until well combined. The batter will be thick. Divide evenly among the 3 cans.
  • Bake for 1 hour in the preheated oven until a toothpick inserted into the center comes out clean. Tip the cans on their side to release the bread as it cools.
