Transform holiday turkey into a delicious Asian salad.
Ingredients:
  • 40.00 ml seasoned rice vinegar
  • 20.00 gm caster sugar
  • 1 garlic clove, crushed
  • 1 small red chilli, seeds removed, finely chopped
  • 500g leftover turkey (preferably breast meat), sliced
  • 100g baby spinach leaves
  • 500.00 ml mixed Asian herbs (such as coriander, mint, Thai basil)
  • 1 large ripe mango, peeled, sliced
  • Black sesame seeds, to sprinkle
  • 100ml honey
  • 60ml rice vinegar
  • 100ml peanut oil
  • 2 tsp sesame oil
Instructions:
  • Combine the rice vinegar, sugar, garlic, and chili, stirring until the sugar dissolves. Drizzle over the sliced turkey, then let it rest.
  • In a food processor, blend honey and vinegar. While blending, slowly drizzle in peanut and sesame oils until a thick dressing forms.
  • On each plate, layer spinach, herbs, turkey, mango slices. Drizzle with dressing and sprinkle with black sesame seeds.
