Cozy up with a savory pumpkin and turkey soup featuring bell peppers on a cold night.
Ingredients:
  • 1 cup chopped onion
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 0.5 cup diced jalapeno peppers
  • 1 pound ground turkey
  • 4 cups chicken broth
  • 2 cups pumpkin puree
  • 2 cups shredded Cheddar cheese, divided
  • 1 (8 ounce) can tomato sauce
  • 1 large tomato, diced
  • 1.5 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1.5 teaspoons red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground cumin
  • 0.5 cup sour cream
Instructions:
  • In a large saucepan over medium heat, warm olive oil. Cook onion, bell peppers, jalapeno peppers, and garlic until tender, approximately 10 minutes. Add turkey and cook until no longer pink, around 5 minutes.
  • Combine the chicken broth, pumpkin puree, 1 cup of Cheddar cheese, tomato sauce, and tomato in a large bowl. Season generously with chili powder, garlic powder, onion powder, red pepper flakes, salt, pepper, and cumin.
  • Simmer covered on low heat for at least 20 minutes, allowing flavors to meld. Garnish with the remaining Cheddar cheese and sour cream before serving.
