30-Minute Turkey Pumpkin Chili: A quick and easy fall dinner made with ground turkey, veggies, and pumpkin puree.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 0.5 cup chopped yellow bell pepper
  • 1 clove garlic, minced
  • 1 pound ground turkey
  • 1 (14.5 ounce) can diced tomatoes
  • 2 cups pumpkin puree
  • 1.5 tablespoons chili powder
  • 0.5 teaspoon ground black pepper
  • 1 dash salt
  • 0.5 cup shredded Cheddar cheese
  • 0.5 cup sour cream
Instructions:
  • In a large skillet, warm the oil over medium heat. Add the onion, green bell pepper, yellow bell pepper, and garlic. Cook and stir until they are tender.
  • Cook the turkey until it is evenly browned, then drain off any excess fat.
  • Combine the tomatoes and pumpkin in a pot. Season with chili powder, pepper, and salt. Lower the heat, cover, and let it simmer for 15 to 20 minutes. Top with Cheddar cheese and sour cream before serving.
