Coleslaw with lemon dressing

Zesty cabbage salad pairs perfectly with grilled chicken or beef.
Ingredients:
  • 300g Chinese cabbage, core removed, finely shredded
  • 300g red cabbage, core removed, finely shredded
  • 2 carrots, peeled, coarsely grated
  • 100g walnut
  • 4 shallots, trimmed, diagonally sliced
  • 80ml olive oil
  • 40.00 ml chopped fresh continental parsley
  • Salt & freshly ground pepper
Instructions:
  • Combine Chinese cabbage, red cabbage, carrots, walnuts, and shallots in a bowl. Mix thoroughly.
  • Combine the olive oil, garlic, lemon juice, and parsley in a bowl and whisk until well blended. Season with salt and pepper to taste.
  • Toss the salad with the dressing until everything is well coated. Serve.
