Healthier twist on classic green bean casserole, ideal side for turkey or chicken dinner.
Ingredients:
  • 2 tablespoons butter or olive oil
  • 1 package (8 oz) sliced fresh mushrooms (3 cups)
  • 1/4 cup chopped onion
  • 2 bags (12 oz each) frozen whole green beans
  • 1/2 cup chopped red bell pepper
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 2 tablespoons Gold Medal™ flour
  • 1 container (6 oz) Greek Fat Free plain yogurt
  • 1/4 cup chopped walnuts, toasted, if desired
Instructions:
  • In a 10-inch skillet, melt butter over medium heat until sizzling. Sauté mushrooms and onion in butter for about 4 minutes until mushrooms are tender. Stir in green beans, bell pepper, and salt. Cook for 6 to 7 minutes, stirring occasionally, until beans are tender.
  • Whisk together chicken broth and flour, then add to skillet. Cook and stir for 3 to 4 minutes until thickened. Remove from heat and stir in yogurt. Finish by sprinkling with walnuts.
