Concord Grape Jelly

Generational grape jelly recipe - perfect gift for grape jelly fans!
Ingredients:
  • 3.5 pounds Concord grapes
  • 7 cups white sugar
  • 1 (3 ounce) pouch liquid pectin
Instructions:
  • First, clean and remove the stems from the grapes. Place the grapes in a large pot and crush them. Add water, cover, and bring to a boil over high heat. Reduce the heat and simmer for 10 minutes. Remove from heat and strain the juice into a large bowl. Let the juice sit in a cool place for 8 hours to overnight to prevent jelly crystals from forming.
  • Pass the juice through a double layer of moist cheesecloth.
  • Pour 4 cups of juice into a large pot, mix in sugar, and bring to a vigorous boil. Stir in pectin and let it boil for 1 minute. Remove from heat and skim off any foam.
  • Fill hot sterilized jars with jelly, leaving 1/4 inch of space at the top. Remove air bubbles by running a clean knife around the inside of the jars. Wipe rims with a moist paper towel to clean any residue. Seal jars tightly with sterile lids.
  • Fill a large stockpot halfway with water and bring it to a boil with a rack at the bottom. Using a holder, lower jars into the boiling water, ensuring they are 2 inches apart. Add more boiling water if needed to cover the jars by at least 1 inch. Cover the pot, bring to a rolling boil, and process for 5 minutes.
  • Allow the jars to cool in the stockpot for 12 to 24 hours, making sure they are spaced apart. Press the center of each lid gently to check for a secure seal. Afterward, remove the rings and store the jars in a cool, dark place.
