Delicious Concord grape pie with oat streusel topping.
Ingredients:
  • 4.5 cups Concord grapes
  • 0.25 cup all-purpose flour
  • 2 teaspoons lemon juice
  • 1 (9 inch) pie shell
  • 0.5 cup quick cooking oats
  • 0.5 cup packed brown sugar
  • 0.25 cup butter
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) with a sheet pan on a lower rack.
  • Separate grape skins from pulp by gently squeezing the end of each grape opposite the stem. Set skins aside. In a medium saucepan, bring the pulp to a boil and cook, stirring, for 1 minute. Strain or use a food mill to remove seeds.
  • Mix together the pulp, skins, sugar, flour, lemon juice, and salt until thoroughly combined. Pour the mixture into the pastry shell.
  • Mix together the oats, brown sugar, and flour. Add the butter and blend until crumbly. Sprinkle the mixture over the filling.
  • Wrap the pastry edges with foil. Bake on a sheet pan for 15 minutes. Uncover, then bake for an additional 20 minutes until beautifully golden brown and bubbling. Allow to cool on a wire rack.
