Concord Grape Pie

Make a delicious grape pie with sweet Concord grapes, pre-made crust, and pantry staples.
Ingredients:
  • 1 (14.1 ounce) package double-crust pie pastry, thawed
  • 5 cups Concord grapes
  • 1.25 cups white sugar
  • 0.25 cup all-purpose flour
  • 1 pinch salt
  • 0.75 teaspoon lemon juice
  • 1.5 tablespoons unsalted butter, cut into small pieces
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C), then slide a sheet pan onto the bottom rack. Gently fit one pie pastry into a 9-inch pie pan; keep the second one handy for later.
  • Prepare the grapes by washing and removing the stems; gently separate the grape pulp from the skins into a large saucepan. Keep the skins in a separate bowl for later use.
  • Mash a handful of grapes in the saucepan to extract their juices. Heat over medium-low heat until boiling.
  • Strain the hot pulp mixture through a food mill to separate seeds. Combine the pulp with the skins in a large bowl and mix in the lemon juice.
  • In a separate bowl, combine sugar, flour, and salt. Stir this mixture into the grapes and transfer into the bottom pastry. Add dots of butter, cover with the top pastry, flute the edges, and make small slits on the crust to allow steam to escape.
  • Place the pie on a baking sheet in the preheated oven and bake for 45 to 50 minutes, or until the crust is golden brown and the juice begins to bubble through the slits in the top crust. Let it cool completely before serving.
