Condensed milk caramel surprise pudding recipe

Indulgent dessert made with cake mix and only four ingredients, perfect with vanilla ice cream.
Ingredients:
  • 2 x 395g cans sweetened condensed milk
  • 600g pkt caramel mud cake, icing reserved for another use
  • 60ml (1/4 cup) vegetable oil
  • Vanilla ice-cream, to serve
Instructions:
  • 1. Preheat your oven to 220C/200C fan forced. 2. Gently pour the condensed milk into a 2L (8-cup) baking dish. 3. Set the dish in a roasting pan and pour water into the pan until it reaches halfway up the side of the dish. 4. Cover the dish with foil and bake for 1 hour, ensuring to refill the pan with water as needed, until the mixture turns golden. 5. Whisk the mixture until it achieves a smooth consistency. 6. Let the dish stand for 15 minutes before serving.
  • Prepare the cake batter as directed on the packet using eggs, oil, and 160ml (2/3 cup) of water.
  • Lower oven temperature to 180C /160C fan forced, then slowly drizzle the cake mixture over the caramel in the dish. Bake for 35-40 minutes or until a skewer inserted in the center comes out clean.
  • Top the pudding with a scoop of creamy ice cream before serving.
