Cookie crumble ice-cream bombes

Indulge in a decadent dessert inspired by Golden Gaytimes.
Ingredients:
  • 2L vanilla ice-cream, slightly softened
  • 105g (3/4 cup) malted milk powder
  • Brown food colouring
  • 500ml vanilla ice-cream, extra
  • 250g Milk chocolate melts
  • 15g Copha, plus extra to grease
  • 160g malt biscuits or honey biscuits, finely crushed
Instructions:
  • Grease the eight 250ml (1 cup) capacity pudding bowls generously with an extra bit of Copha. Line each bowl with plastic wrap, making sure the edges hang over the sides.
  • Transfer the ice-cream to a large bowl. Sprinkle in the malt powder and fold gently, being careful not to over soften the ice-cream. Add a few drops of food colouring until the ice-cream turns caramel in color. Distribute evenly among the bowls, creating a hollow in the middle. Place the bowls on a tray in the freezer for 2 hours or until solid. Use the back of a spoon to level the top. Freeze for an additional 2 hours or until completely firm.
  • Using an ice-cream scoop, form balls with the extra vanilla ice-cream and place one ball in each cavity, smoothing the top. Freeze overnight for best results.
  • Melt the chocolate and Copha together in a microwave-safe bowl until smooth. Pour the mixture over the ice-cream domes on serving plates, sprinkle biscuit crumbs on top, and enjoy.
