Easy and decadent mini Oreo cheesecakes with a cookie crust and crumble topping.
Ingredients:
  • 1 (14 ounce) package chocolate sandwich cookies (such as Oreo®)
  • 2 (8 ounce) packages cream cheese, softened
  • 1 (8 ounce) container sour cream
  • 0.5 cup white sugar
Instructions:
  • Preheat the oven to 275°F (135°C). Line 18 muffin cups with paper liners and add 1 sandwich cookie to each. Crumble the rest of the cookies.
  • In a mixing bowl, blend cream cheese, sour cream, sugar, eggs, and vanilla with an electric mixer until smooth. Fill each liner 90% full with the cheesecake mixture. Sprinkle cookie crumbles on top of each mini cheesecake.
  • Bake in the preheated oven for 22 minutes, then cool in the pan for 30 minutes. Chill in the refrigerator until completely set, about 3 hours.
