Indulge in mini cheesecake cups with a delicious Oreo cookie surprise inside!
Ingredients:
  • 12 chocolate sandwich cookies (such as Oreo®)
  • 2 (8 ounce) packages cream cheese, softened
  • 2 large eggs, lightly beaten
  • 0.5 cup sour cream
  • 0.5 cup white sugar
  • 0.5 teaspoon vanilla extract
  • 6 chocolate sandwich cookies (such as Oreo®), chopped
Instructions:
  • Preheat the oven to 275 degrees F (135 degrees C) and line a 12-cup muffin tin with paper liners, placing 1 cookie into each cup.
  • In a medium bowl, use an electric mixer to whip the cream cheese until smooth. Slowly incorporate eggs, sour cream, sugar, and vanilla extract, making sure to mix well after each addition. Gently fold in the chopped cookies using a spatula.
  • Fill each cup of the prepared tin almost to the brim with the delicious batter using a spoon.
  • Bake in the preheated oven for 20-22 minutes until set. Then, cool on a rack and refrigerate until firm for at least 4 hours.
