Indulgent Oreo cheesecake bites with a luscious chocolate drizzle, ideal for any occasion or as a delightful dessert.
Ingredients:
  • 1 (14 ounce) package chocolate sandwich cookies (such as Oreo®)
  • 0.25 cup butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 4 ounces semisweet chocolate
  • 4 ounces dark chocolate
Instructions:
  • Preheat the oven to 325°F (165°C) and line a 9x13-inch baking pan with foil, allowing the excess to hang over the edges.
  • Crush 24 cookies until fine, mix with melted butter, then press onto the bottom of the pan. Chop the rest of the cookies and keep aside.
  • Combine cream cheese and sugar in a large bowl until smooth. Mix in sour cream and vanilla until well combined. Gradually add eggs, one at a time, mixing until just incorporated. Fold in chopped cookies, then pour over crust.
  • Bake in the preheated oven for 35 to 40 minutes, until the sides are set and the center is almost set. Remove from the oven and let the pan cool completely on a wire rack for about 1 hour.
  • Chill covered for a minimum of 2 hours. Uncover, lift cheesecake out of the pan using the foil overhang. Cut into 36 squares and place on a waxed or parchment paper-lined baking tray.
  • In a microwave-safe bowl, melt semisweet chocolate in 30-second intervals on 50% power, stirring often. Do the same with dark chocolate. Transfer melted chocolates to separate zip-top bags, snip a corner, and drizzle over the cheesecake bites. Chill before serving.
