Indulgent Oreo cheesecake bars, easy to make and perfect for a crowd.
Ingredients:
  • nonstick cooking spray
  • 1 (19.1-ounce) package chocolate sandwich cookies with white filling (such as Oreos ®)
  • 1/4 cup salted butter
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 3/4 cup sour cream
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
Instructions:
  • Prepare for culinary magic by collecting all the required ingredients first. Then, heat up the oven to 325°F (165°C).
  • Prepare the baking pan by lining it with heavy-duty foil, ensuring there is a 2-inch overhang on two opposite sides. Lightly coat the foil with nonstick cooking spray and set it aside.
  • Add 30 cookies to a food processor and pulse until finely ground.
  • Combine melted butter in the mixture, pulsing lightly to incorporate.
  • Pour the mixture into the pan and evenly press the crumbs onto the bottom.
  • Bake in the preheated oven for 10 minutes until firm.
  • In a large bowl, whip cream cheese and sugar with an electric mixer on high speed until light and fluffy, approximately 3 minutes.
  • Combine sour cream, eggs, vanilla, and salt, and mix until incorporated.
  • Crush the remaining Oreos by placing them in a resealable bag and gently pounding them with a rolling pin.
  • Set aside a luxurious 1/2 cup of the decadent cookie crumbs. Gently incorporate the remaining crumbs into the luscious batter.
  • Evenly spread the batter over the prebaked crust, making sure to smooth out the top.
  • Garnish with the saved cookie crumbs.
  • Bake in the oven until the center is slightly firm with a gentle wobble, about 35-40 minutes.
  • Allow the dish to cool in a pan on a wire rack until completely cool, approximately 2 hours. Once cooled, cover and refrigerate for at least 1 hour before serving.
  • Lift the foil to easily remove the uncut bars from the pan.
  • Slice into delectable 2x2-inch bars for serving.
