Indulge in these irresistible mini Oreo cheesecakes - creamy batter baked on a bed of Oreo cookies for maximum flavor and delight.
Ingredients:
  • 2 (8 ounce) packages cream cheese, softened
  • 2 eggs, beaten
  • 0.5 cup white sugar
  • 24 chocolate sandwich cookies (such as Oreo®)
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C and move the oven rack to the middle tier. Line 24 mini-muffin cups with miniature paper liners.
  • Combine creamy cream cheese, eggs, and sugar in a bowl, and whip until luxuriously smooth.
  • Place a cookie into the bottom of each paper liner and generously spoon the cream cheese mixture on top of the cookies.
  • Bake in the hot oven until the center is almost set, for approximately 15 minutes.
  • Transfer the tins to a wire rack to cool slightly, then refrigerate until the cheesecake layer sets firmly, approximately 3 hours.
